Summer Salsa

With the addition to our box of some locally grown cucumbers (coutesy of Smithwick Gardens), I’m including this recipe whcih is a family favorite.

1 cucumber seeded & chopped
1 can black beans – rinsed
1 chopped mango
2-3 cloves garlic
1/2 onion finely chopped
juice of 1 lime
2 TBS rice vinegar
chipotles in adobo chopped fine, to taste
Salt to taste.

Can be eaten with tortilla chips or as a salad.

This weeks bounty includes -
2-3 Kent Mangoes (these are my favorite mangoes, they don’t have any fibers, and are just like butter!)
5-6 nectarines
3+ lbs bananas
1 cantaloupe
1 lb strawberries
(do you see a fruit salad happening here?)
5 lbs yukon gold potatoes
1 bunch swiss chard
1 broccoli

Sweet Potato Salad

As promised, a delicous nutritious summer salad.
2 large yams
2 “regular” potatoes
1 cup mayo
3 TBS mango chutney
2-3 TBS curry powder
4 chopped scallions
1 TBS chopped parsley

Cook potatoes. Yams cook more quickly (about 5-6 min) so add them about 3 min after the other. Drain & cool.
For dressing mix mayo, chutney, curry, salt & pepper in a food proccessor or blender. Adjust seasoning for personal preference. Mix into potatoes & top with scallions & parsley.
I have also added chopped onion and/or celery to this salad depending on what I have available. Let your fridge be your guide!
